Farm-to-Table Cooking w/ José Matamoros

Explore eating seasonally and locally with Chef José Matamoros, who specializes in designing menus based on local and sustainable farm-to-table cuisine. Jose will guide your team on how to source and cook with seasonal produce. Keeping accessibility in mind, we'll discuss tips and strategies for finding affordable local produce.


Discover the journey of an average meal, which travels 1,200 km from farm to plate, and discuss methods to locate and utilize locally grown food.

Meet your Chef: Jose Matamoros

Born in Mexico, José Matamoros has worked in kitchens across Italy, France, and Canada. Upon opening Guelph’s “La Reina”, he worked as Senior Sous Chef at El Catrin in Distillery District, arguably the biggest and busiest Mexican restaurant in Canada. He’s recently taken the position of Chef de Cuisine at 1Kitchen at Toronto’s 1Hotel.
